6 bottles box of Alentenjo's Red Wine Monte do Desespero, coming from 31.3 hectares of vineyards of Herdade do Monte das Serras in Reguendos de Monsaraz, planted on a schistic, slave, and hard land. Once a dry crop, the region now has a dry clime with low precipitation. The influence of hot winds, at the peak of summer, brings small swirls through the vineyard, reminiscing a warm, almost African, environment.
Winemaking: Coming from the best grapes from Monte das Serras, handly harvest to 15kg boxes, that after sorting, are subject to total destemming, followed by crushing and maceration by the cold for 36 hours, fermentation for 8 days in inox cubs at 26ºC, followed by the malolactic fermentation. The first stage happens for 16 months in wood, after bottling, it suffers a compacting stage for 6 months.
